脂肪先进行初步氧化,把长链的脂肪酸断裂成二碳的小分子(乙酰基,载在辅酶上,称作乙酰辅酶A)
乙酰辅酶A需要转化成三碳的糖,需要多加一个碳原子,在植物中有一系列反应(乙醛酸循环)把两个乙酰辅酶A变成四碳的丁二酸,再通过氧化和脱羧基变成三碳的物质,进而转化成三碳糖。
在动物细胞中没有乙醛酸循环,只能在线粒体中,沿着氧化丙酮酸的一系列反应之中的一部分生成丁二酸,再转化。
动物细胞生成乙酰辅酶A一般就直接氧化了,这也是动物不容易把脂肪转化成糖的原因之一。植物(特别是油料种子)特别需要把储存的脂肪转化成纤维等糖类,所以容易进行脂肪转化。
