不是的,时间长就老了。如果新鲜的猪血在制作过程中火候掌握的不好煮的久了老了,火大了起气泡了,再拿来炒菜怎么炒都烧不出嫩的效果。所以在选择猪血时要看是否有晃动的感觉,轻轻的碰一下能有晃的如果凉似的就比较嫩,看血身上有没有洞,有洞的也不好。回家烧的时候要后放猪血,烧菜时要大火炒时间不要久,烧汤时要等锅中的水沸腾后才放猪血然后大火再把汤烧开就起锅。
